Does this mean compiling track together like a stem?

No ... it means recording a number of takes of the same vocal or instrument track, then using the best pieces of those multiple takes to make up the final version.

It's short for "composite" edit.

The traditional, pre-digital meaning of a musical "comp" is to accompany a soloist with chords on a piano or guitar. In fact, I'm pretty sure that's the definition you'll find in the dictionary. Of course, it's not the correct definition in DAW-land. :-)
